To appreciate a great young wine it must be ''treated roughly'', shaken around, to break up its molecules and reveal what it will eventually be, in its maturity. The aromas of young wines must circulate inside the glass without evaporating. LES IMPITOYABLES Glass # 1, with its sloping sides, provides a large area for oxidation which speeds up the circulation of aromas. The 120° angle, in particular, develops the primary fruits and floral scents which are to be found in a young red wine. The narrow mouth prevents their dispersal.
